In her latest instalment of the Candid Orange cooks series, Instagram plant-based food blogger Eilidh Anderson (@eat_with_els), show us another sweet treat.
Chocolate orange marble loaf
Ingredients
- 280 ml almond milk
- Zest of 2 oranges
- 4 tbsp orange juice
- 150 g dairy free butter
- 3 tbsp golden syrup
- 275 g self raising flour
- 175 g caster sugar
- 4 tbsp cocoa powder
- 1 tsp bicarbonate of soda
For the icing:
- juice of 1/2 an orange
- 1/2 a bar of dark chocolate
- 1/2 a bar of dairy free milk chocolate
Preheat the oven to 180 degrees
- Zest & juice the oranges
- Add the orange juice into a bowl/jug with the almond milk and set aside
- In a pan melt the butter & golden syrup & leave to cool a little
- In a large bowl sieve the flour, sugar & bicarbonate of soda
- Add the almond milk & orange juice mixture, butter & syrup mixture and the dry ingredients together
- Once combined divide the mixture into 2 bowls
- In one mixture add the cocoa & mix
- In the other add the orange zest (this mixture might need a tbsp more flour to match the thickness of the choc mixture)
- In a lined baking loaf tray spoon the mixture layering it almost like a chess pattern until both mixtures are used, then gently move a knife through the mixture to create a marble effect.
- Bake for 40 minutes at 180 degrees or until a knife comes out clean in the centre of the cake
- Wait until the cake is completely cooled and remove from tin
- For the icing melt all the chocolate together in a bain-marie & add the orange juice
